Lemon-Ginger Apple Kale Salad

This is like my LBD of kale salads. It’s so simple, low-maintenance, and a go-to when I don’t have a lot of time or ingredients. It hits all the right notes- the tangy lemon, sweet apple, spicy ginger, and crunchy kale can turn the hearts of even the most devout kale haters (my roommate is a testimony to that). I am never not craving this salad, but it is especially refreshing if you need a bit of a “reset”.

Lemon Ginger Apple Kale Salad
Kale Salad:
  • 1 bunch of kale, washed, de-stemmed, and chopped into bite-sized pieces
  • 1 T. extra virgin olive or avocado oil
  • 1 Fuji apple, diced
  • handful toasted walnuts*, chopped
  • 1/2 cup apple juice sweetened dried cranberries (or regular if not avoiding cane sugar)
Lemon-Ginger Dressing:
  • Juice of 2-3 lemons
  • 2 t. Minced ginger
  • 1/2 T. honey (optional)
  • Fresh ground salt + pepper
To Prepare:

Massage kale in a large bowl with oil. Add half the dressing and toss to coat the greens. Add in chopped apple, toasted walnuts, dried cranberries, and the remaining dressing. Finish with an additional sprinkle of freshly ground salt and pepper (I like extra pepper).

Note: Toasting walnuts is so simple, and it makes a big difference in flavor- just 7-8 minutes at 350, tossing halfway through, until fragrant.
