This side comes together in a matter of minutes. The tanginess of the lime, freshness of the cilantro, and creaminess of the coconut milk make for a balanced, flavorful dish. Though you can’t expect the chewy texture of rice, this does the trick without all the starch.
Creamy Coconut Cauliflower Rice
Ingredients:
- ½ tablespoon coconut oil
- 2 cloves minced garlic
- 1 head cauliflower, riced (I buy pre-riced, fresh or frozen to save time and mess!)
- Salt & pepper
- ½ cup light coconut milk
- Zest of half a lime
- Juice of 1 lime
- Unsweetened toasted coconut flakes
- Cilantro
- 1.2 T. maple syrup (optional)
To Prepare:
- Heat coconut oil over medium-low heat
- Add garlic and saute until fragrant, about 2 minutes
- Pour in riced cauliflower, salt, and pepper, and toss together
- Pour in coconut milk and continue to cook until liquid begins to absorb and cook out
- Remove from heat and add lime zest and juice, coconut flakes, and cilantro
- Finish with optional maple syrup for a tangy-sweet twist
