Creamy Coconut Cauliflower Rice

This side comes together in a matter of minutes. The tanginess of the lime, freshness of the cilantro, and creaminess of the coconut milk make for a balanced, flavorful dish. Though you can’t expect the chewy texture of rice, this does the trick without all the starch.

Creamy Coconut Cauliflower Rice
Ingredients:
  • ½ tablespoon coconut oil
  • 2 cloves minced garlic
  • 1 head cauliflower, riced (I buy pre-riced, fresh or frozen to save time and mess!)
  • Salt & pepper
  • ½ cup light coconut milk
  • Zest of half a lime
  • Juice of 1 lime
  • Unsweetened toasted coconut flakes
  • Cilantro
  • 1.2 T. maple syrup (optional)

 

To Prepare:
  1.  Heat coconut oil over medium-low heat
  2. Add garlic and saute until fragrant, about 2 minutes
  3.  Pour in riced cauliflower, salt, and pepper, and toss together
  4. Pour in coconut milk and continue to cook until liquid begins to absorb and cook out
  5. Remove from heat and add lime zest and juice, coconut flakes, and cilantro
  6. Finish with optional maple syrup for a tangy-sweet twist
