Shortcut Make-Ahead Breakfast Casserole

So funny story with this recipe… my husband said he was tired of eating oatmeal everyday, but wanted something he could quickly grab in the morning since he is often out the door early. As the main cook of the household, I knew I couldn’t add another things to my usual routine of meal prep. So I decided to teach him this template for egg casseroles that was quick, healthy, required minimal cooking, and could last him all week. What more can you ask for???

Veggie Breakfast Casserole

Prep Time: 15 minutes
Cook Time: 35 minutes
Servings: 9

Ingredients

  • 12 eggs
  • 1/2 cup greek yogurt
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups frozen kale
  • 2 cups frozen onions, peppers, and/or mushrooms
  • .5 cup cheese (I like feta or Mexican blend)
  • bacon or chicken sausage (optional)

Instructions

  • Add vegetables and cheese to a baking dish. Whisk eggs with yogurt and seasonings and pour into dish. Add cooked bacon or chopped chicken sausage if desired. Cook at 375 for ~35 minutes or until it is set in the middle
